Ingredients:
-Dalda Sunflower oil 2 tbs
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Hari mirch (Green chilli) finely chopped 1 tbs
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Lal mirch (Red chilli) crushed ½ tsp
-Iodized Himalayan pink salt 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder ½ tsp
-Aloo (Potatoes) boiled 2 large
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Maida (All-purpose flour) sifted 2 & ½ Cups
-Ajwain (Carom seeds) 1 pinch
-Iodized Himalayan pink salt 1 tsp or to taste
-Ghee (Clarified butter) 4 tbs
-Water 1 Cup or as required
-Dalda Sunflower oil for frying
Directions:
-In frying pan,add cooking oil,ginger garlic paste,green chilli,mix well & cook for a minute.
-Add coriander seeds,red chilli crushed,pink salt,cumin seeds,turmeric powder,garam masala powder & mix well.
-Add potatoes & mash well with the help of masher.
-Add fresh coriander & mix well.
-Let it cool.
-In a bowl,add all-purpose flour,carom seeds,pink salt,clarified butter & mix well until it crumbles.
-Gradually add water,mix well & knead until dough is formed,cover & let it rest for 15 minutes.
-Knead dough again until smooth.
-Take 100g of dough,make a ball & roll out with the help of rolling pin.
-Remove corners to make a square shape,spread potato mixture (2 tbs) & cover with half dough then cut into strips,twist it,apply water & roll up.
-In a wok,heat cooking oil, heat it (150C) & fry on medium flame until golden & crispy (makes 10-12).
-Serve with green chutney!
Note:
-If potato is over boiled,add 1-2tbs cornflour in potato mixture.

-Frying pan mein cooking oil,adrak lehsan paste aur hari mirch dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Sabut dhania,lal mirch crushed,pink salt,zeera,haldi powder aur garam masala powder dal kar achi tarah mix karein.
-Aloo dal kar masher ki madad se mash karein.
-Hara dhania dal ker ache sa mix ker lein.
-Thanda ker lein.
-Ek bowl mein maida,ajwain,pink salt aur ghee dal kar crumble ban jaye tak mix karein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15 minutes kliya rest dein.
-Phir dough ko dobara smooth gundh lein.
-100g dough le kar ball banayein aur rolling pin se roll karein.
-Corners cut ker ka square shape banayein,aloo mixture (2 tbs) dal ker pheela lein,half dough se cover karein,phir strips cut ker ka twist karein aur pani laga ker roll up karein.
-Karahi mein cooking oil garam karein (150C) aur medium flame par golden & crispy hone tak fry karein (makes 10-12).
-Green chutney ke sath serve karein!
Note:
-Agar alu zyada over boiled ho jaye to potato mixture mein 1-2 tbs cornflour add karein.
