Mango Pavlova

Ingredients:

Prepare Pavlova:

-Anday ki safedi (Egg whites) 4

-Cream of tartar ½ tsp

-Iodized Himalayan pink salt 1 pinch

-Bareek Cheeni (Caster sugar) 1 Cup (220g)

-Cornflour 2 tsp

-Vanilla essence 1 tsp

Prepare Mango Curd:

-Mango puree 1 cup

-Olper’s cream ¼ Cup

-Doodh (Milk) 2 tbs

-Sugar 3 tbs

-Lemon juice 2 tsp

-Cornflour 1 tbs

-Makhan (Butter) 50g
Prepare Whipped Cream:

-Olper’s cream chilled 200ml

-Icing sugar 2 tbs

Direction:

Prepare Pavlova:
-Tips to make perfect pavlova:
-Ensure your bowl & beaters are completely clean & grease free.
-use room temperature egg whites.
-use superfine caster sugar
-add sugar gradually
-beat until stiff & glossy peaks form.
-In a bowl, add egg whites, cream of tartar, and pink salt.
-Beat for 1-2 minutes until foamy.
-Gradually add fine sugar while beating on high speed until it fully dissolves & stiff peaks form (add ¼ cup sugar, beat for 1 minute, then add another ¼ cup — repeat until you've added all sugar).
-Sift in the cornflour, add vanilla essence & beat until well combined.
-Transfer the mixture into a piping bag with a nozzle.
-Line a baking tray with baking paper, then draw 4 circles on the back as a guide.
-Pipe the meringue onto the circles, making a small dip in the center of each.
-Bake in a preheated oven at 120°C for 70 minutes.
-Turn off the oven & leave them inside the oven with the door slightly ajar to completely dry & cool for 3-4 hours.

Prepare Mango Curd:
-In a saucepan, add mango puree, cream, milk, sugar, lemon juice, cornflour & whisk well.
-Turn on the flame and cook on medium heat for 5-6 minutes, stirring constantly.
-Add butter and mix until it melts.
-let it cool completely then transfer to a piping bag.

Prepare Whipped Cream:
-In another bowl, add cream and beat on high speed for 4-5 minutes.
-Add icing sugar and beat until stiff peaks form & transfer to a piping bag.

Assembling:
-Add prepared mango sauce, whipped cream, mango chunks, mix berries, over pavlova and garnish with mint leaves. (Makes 4)
