Ingredients:
Prepare Dahi Wali Hari Chutney:
-Dahi (Yogurt) chilled 1 & ½ Cup
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) with stems handful
-Lehsan (Garlic) 3 cloves
-Hari mirch (Green chillies) 5-6
-Iodized Himalayan pink salt ½ tsp or to taste
-Zeera (Cumin seeds) 1 tsp
-Tatri (Citric acid) ¼ tsp
-Sugar 1 tsp
-Ice cubes 2-3
Prepare Dhamaka Mirch:
-Imli pulp (Tamarind pulp) 3-4 tbs
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Baisan (Gram flour) Roasted 2 tbs
-Iodized Himalayan pink salt ¼ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 & ½ tsp
-Ajwain (Carom seeds) ¼ tsp
-Chaat masala ½ tsp
-Saunf (Fennel seeds) roasted & crushed 1 tsp
-Hari mirch (Green chillies)12-13
Prepare Tikki:
-Chana daal (Split bengal gram) soaked 1 Cup
-Sabut lal mirch (Button red chillies) 5
-Laung (Cloves) 3
-Zeera (Cumin seeds) 1 tsp
-Sabut dhania (Coriander seeds) ½ tbs
-Badi elaichi (Black cardamom) 1
-Kali mirch (Black peppercorns) 8-10
-Haldi powder (Turmeric powder) ¼ tsp
-Iodized Himalayan pink salt 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Water 2 Cups
-Hara dhania (Fresh coriander) handful
-Anday (Eggs) 4
-Cooking oil 1 tbs
-Cooking oil 2 tbs
-Anda (Egg) 1
-Iodized Himalayan pink salt 1 pinch
-Kali mirch powder (Black pepper powder) 1 pinch
-Ketchup as required
-Band gobhi (Cabbage) shredded as required
-Pyaz (Onion) finely cut as required
-Chaat masala as required
Direction:
Prepare Dahi Wali Hari Chutney:
-In a blending jar, add yogurt, mint leaves, fresh coriander, garlic, green chillies, pink salt, cumin, citric acid, sugar, ice-cubes, blend well, dahi wali hari chutney is ready, set aside.
Prepare Dhamaka Mirch:
-In a bowl, add tamarind pulp, coriander, gram flour, pink salt, cumin, carom seeds, chaat masala powder, fennel seeds, mix well, dhamaka mixture is ready.
-Slit green chilies with the help of the knife and deseed them.
-Stuff green chillies with prepared dhamaka mixture.
Prepare Tikki:
-In a wok, add split bengal gram, button red chilli, cloves, cumin, coriander, black cardamom, black peppercorn, turmeric powder, pink salt, ginger garlic paste, water.
-Turn on the flame, mix well & bring it to boil, cover & cook on low flame for 20-25 minutes or until lentils are tender.
-Remove the cover, turn off the flame, mix well, & let it cool.
-Transfer it to a chopper, add fresh coriander & chop well.
-With greased hands, take 50g of tikki mixture & make tikki. (Makes:12-13)
Let’s assemble Dhamaka Mirchi Bun Kabab!
-Heat griddle, add cooking oil, add stuffed chillies, fry for a minute, then cover & cook on low flame for 2 minutes, then set aside.
-Add more cooking oil, heat it, dip prepared tikki into the whisked eggs & add on griddle, fry on low flame until golden from both sides & set aside.
-In a bowl, add egg, pink salt, black pepper powder, whisk well, add cooking oil on griddle, heat it, pour whisked egg, fry from both sides then fold it, omelet is ready set aside.
-Cut long burger bun horizontally & add on griddle, toast from both sides.
-Spread prepared dahi wali hari chutney on base & ketchup on top.
-Add cabbage, onion, sprinkle some chaat masala powder, prepared patty, omelet, fried dhamaka chillies, cover with top bun & dhamaka mirchi bun kabab is ready!
